Vegetable Biryani - south Indian style

 




Hi guys ! Welcome to my food blog . Today my recipe is vegetable Biryani in South Indian style to be cooked either in a pot or in a cooker . It to be served with raita and brinjal grave . This recipe I had posted for 4 servings .

If you want to cook in cooker wait for 3 whistles for the rice to be cooked .

Ingredients :

Spices

  • Bay leaf - 2
  • Cinnamon - 2
  • Star anise - 1
  • Cardamom - 4
  • Cloves - 5
  • Fennel seeds - 1/2 tablespoon
  • Turmeric powder - 1/2 tablespoon
  • Garam masala - 1 tablespoon
  • Chilli powder - 1 tablespoon or according to your convenience .

Vegetables 

  • Onion - 2 medium size to be sliced 
  • Tomato - 1 medium size to be chopped
  • Green chilli - 1 medium size to be sliced
  • Carrot - 1 chopped 
  • Beans - 4 chopped
  • Potato - 1 cubed 
  • Peas - 1/4 cup soaked previous night
  • Cauliflower - 10 florets 
  • Mint leaves
  • Coriander leaves

Other ingredients

  • Basmati rice - 1and 1/2 cup
  • Water - 2 cups 
  • Curd - 1/2 cup
  • Salt to taste 
  • Ginger garlic paste - 1/2 cup
  • Cashewnut - 8 to 10
  • Ghee / butter - 3 tablespoon 

Method of preparation :

  • In hot pot add ghee or butter and add the spices which I listed out above in ingredients column   ( Bay leaf - 2Cinnamon - 2Star anise - 1Cardamom - 2Cloves - 2Fennel seeds - 1 tablespoon ) and cashewnut . Roast for 2 minutes in medium flame .
  • Then add sliced onions , green chilli and mint leaves . Saute till onion changes to golden color .
  • Add ginger garlic paste and cook it for 2 minutes .
  • Then , add tomatoes and cook till it get a soft texture . After this add curd and cook for 2 minutes .
  • This is the stage to add all other vegetables I mentioned above . Cook the vegetables well .
  • After the vegetables get shrinked add turmeric , garam masala , chilli powder and salt to it . Saute it well . All the raw smell of masalas should disappear .
  • Add water and check the taste of salt and spice to adjust it . And add coriander leaves .
  • When water starts to boil add basmati rice and saute gently with single stroke . Don't over saute then rice will broke .
  • Close the pot with lid till the rice cooks . When the rice cooks 3/4 th over the lid of the pot place a hot water bowl to make a dum in a medium flame for 15 minutes .
               Our veg briyani is ready ! 
  • Finally , serve the vegetable briyani with raita or brinjal grave on a Banana leaf in a traditional way and enjoy the south indian style of preparation .
