Introduction to mutton Biryani : ( south Indian Mutton Biryani ) 


Biryani is the love of all which made us to feel some special while enjoying it . Enjoying means both cooking and tasting . Though there are types of Biryani , like vegetable , chicken , mutton , prawn , Mutton Biryani has a unique taste . 

There are many styles of preparing Biryani like , Tamil Nadu style , Hyderabad , dum , etc ,. Here I'm going to you one perfect south Indian mutton Biryani to you all . 

Ingredients : 


For boiling mutton : 

  • Mutton - 500 g
  • Turmeric powder - 1 teaspoon
  • Salt required amount 

For Biryani : 

  • Ghee - 3 tablespoon
  • Oil - 3 tablespoon
  • Bay leaf - 2 
  • Cinnamon - 2
  • Cloves - 3
  • Cardamom - 2
  • Fennel seeds - 1 teaspoon
  • Onion - 4
  • Green chilli - 2
  • Tomato - 3
  • Ginger garlic paste - 2 tablespoon
  • Curd - 1 cup 
  • Mint leaves 
  • Coriander leaves 
  • Turmeric powder - 1 teaspoon
  • Chilli powder - 1 tablespoon
  • Garam masala - 1.5 tablespoon
  • Salt 
  • Basmati rice - 1/2 kg 

Points to note : 


⏲️ Mutton boiling time : 7-8 whistles
🕰️ Rice soaking time : half an hour
⏱️ Biryani preparation time : 30 minutes

Method of preparing mutton Biryani : 


Soaking rice : 


Take 1 kg of basmati rice .

Wash it with a fresh drinking water for 2-3 times . 

And then , Soak it for half an hour . 


Slicing


Take 4 big size onion and slice them finely . 

Take 3 big size tomatoes and chop them . 

Take 2 green chillies and slice them into two halves . 


Ginger garlic paste : 


Prepare the ginger garlic paste by grinding 2-3 inch of ginger and 1 whole garlic in a blender . 

Peel the skin of both ginger ( chop them into small pieces ) and garlic and add to blender and grind them without adding water . 

If you want you can buy the paste from grocery store . But preparing by yourself adds more taste . 


Boiling mutton : 


Clean the mutton properly by removing the waste from it . 

Wash them in a fresh drinking water for 2-3 times . 

Have a finally rinse with turmeric water . ( Add 1 teaspoon of turmeric powder in a water and rinse ) . 

In a pressure cooker , add the mutton and water . 

Mutton should soak completely in the water .

Let it for 7-8 whistles . ( Approximately 30 minutes ) 

And then , turn off the flame . 

Once the pressure realised completely , then open the cooker and check whether mutton is cooked well . 

If not , without closing the lid and adding whistle of the cooker , just on the flame and boil for another 10 minutes . 


Cooking Biryani : 

  • In a cooking pot , add 3 tablespoon of ghee and 3 tablespoon of oil . 

Tip : if you want , you can add totally 6 tablespoon of ghee . 

  • Once the oil / ghee heated , add 2 cinnamon , 1 star anise , 3 cloves , 2 cardamon , 2 bay leaf and 1/2 tablespoon of fennel seeds . 

  • Roast for 2 minutes in low flame . 

  • Then , add sliced onion and green chilli . Saute them well . 

  • Then , add handful of mint leaves and saute . 

  • Once the onion turns golden brown , add 3 tablespoon of ginger garlic paste . 

  • Cook for 2 minutes in medium flame . 

  • Once the raw smell of ginger garlic paste fades , add chopped tomatoes and cook . 

  • Tomatoes should be cook till it gets soft texture . 

  • Add boiled mutton and saute once well and close the pot with lid . 

  • After 5 minutes open the lid and add 1/2 cup of curd . 

  • Then , add 1 tablespoon of chilli powder , 1 tablespoon of garam masala , 1/2 tablespoon of turmeric powder and required amount of salt . 

  • Saute altogether well and close the pot with lid . 

  • Let the mutton and masalas ( spices ) cook well .

Tip : though you cooked the mutton previously , at this stage you need to cook for another 5-10 minutes along with spices . 

  • After 10 minutes , open the lid and check whether the spices and salt are perfect . If not adjust accordingly to your taste .

Tip : If you adjusted by adding anything , let it cook for 5 minutes . 

  • Now , add water . For 1 cup of rice add 1 cup of water . For 2 cup of rice add 2 cups of water . 

Tip : measure the rice and water with the same cup . 

  • Once the water starts to boil , add handful of coriander leaves . 

  • Then , add rice and stir once . 

  • Then , close the pot with the lid and let it cook for 15 minutes in medium flame .
Tip : If you cook in pressure cooker , add whistle and leave it for 4 whistles . 

  • After 15 minutes reduce the flame to low and cook for another 5-10 minutes.  Once the rice cooked well turn off the flame . 

Our yummy and delicious mutton Biryani is ready ! 

Plating and garnishing : 

Plate the mutton Biryani with brinjal grace and raita . 

Garnish the Biryani with mutton pieces , coriander leaves / mint leaves and 1 or 2 onion rings .

Ghee for health : 

Ghee is also known as clarified butter . Ghee is prepared by heating butter to remove water and milk solids . It is rich in high concentrated fats which helps to maintain a healthy heart . Adding ghee as a part of healthy diet helps to maintain a proper cholesterol level .
