Introduction to mutton chukka :
Mutton chukka recipe is also known as Mutton ( fry ) varuval recipe . It's a Chettinad special dish . Yes , it's original is Chettinad , Tamil Nadu . The word ' chukka ' means ' a deep fry ' . That's why the name of the dish called mutton varuval .
Chukka is made with either or chicken or mutton with shallots , tomatoes , ginger garlic paste with spices like chilli powder , pepper powder , turmeric powder , red chillies and etc ...
In this blog , I'm going to share you my cooking experience on mutton chukka recipe .

🔖 Main ingredients : mutton , spices , onion , ginger , garlic .
Ingredients :
- Mutton - 500 g
- Shallots - 10
- Red chilli - 2
- Fennel seeds - 1/2 teaspoon
For boiling :
- Turmeric powder - 1/2 tablespoon
- Garam masala - 1/2 tablespoon
- Ginger garlic paste - 1/2 tablespoon
- Salt
For frying :
- Turmeric powder - 1/2 tablespoon
- Chilli powder - 1 tablespoon
- Garam masala - 1 tablespoon
- Cumin powder - 1/2 tablespoon
- Pepper powder - 1 tablespoon
- Salt
- Oil
- Curry leaves
Method of preparation :
Let's start to prepare mutton chukka recipe !
Boiling mutton :
- Wash the mutton thoroughly in a clean drinking water for 3-4 times .
- In a pressure cooker , add the mutton and water .
Tip : the mutton should be soak completely in the water .
- To this add , 1 teaspoon of turmeric powder , 1/2 teaspoon garam masala , 1/2 teaspoon ginger garlic paste and required amount of salt .
Tip : just add 1/2 teaspoon , since we will be using the spices again in frying .
- Add weight / whistle for the cooker .
- After 6-8 whistles , turn off the flame .
- Wait till the pressure release completely from the cooker.
- Then , remove the weight/ whistle and open the cooker and check whether the meat is cooked well .
Frying mutton :
- In a pan , heat 3-4 tablespoon of oil .
- Once the oil get heated , add 1/2 tablespoon of fennel seeds and 2 red chillies .
Tip : If you want you may also add spices like cinnamon , cardamom , cloves and star anise .
- After 2 second , add 10 finely chopped shallots and saute it well .
Tip : From starting maintain the flame in medium .
- After 2 minutes , means when shallots turns to golden brown , add 2 tablespoon of ginger garlic paste and saute it well .
- Wait till the raw smell of ginger garlic paste disappears .
- Add , 1 finely chopped tomato and stir till it gets soft texture .
- Then , add the mutton which you prepared .
- Add the mutton along with the water in which you boiled .
- Saute it once well and close the pan with a lid for 5 minutes in a medium flame .
Tip : mutton is cooked already well . So , there is no need to cook it for more minutes while preparing chukka .
- After 5 minutes , open the lid and stir well .
- Then , add 1/2 tablespoon of turmeric powder , 1 tablespoon of chilli powder , 1 tablespoon of garam masala , 1/2 tablespoon of cumin powder and required amount of salt .
Tip : the quantity of chilli powder is your choice according to your desire on spice .
- Cook well till the raw smell of masalas gets disappear .
Tip : cook for 7-8 minutes in a medium flame .
- Then , add 0.5 - 1 tablespoon of pepper and fried curry leaves . Stir well and cook for another 5 minutes and turn off the flame .
Tip : you may also add pepper according to spice how you want .
