Veg Kurma recipe 

 

Vegetable kurma is a south Indian recipe which is made with certain vegetables as like vegetable briyani . The difference between the vegetable briyani and vegetable kurma is in coconut paste instead of adding rice and dum .


The vegetables used in preparing this veg Kurma recipe differs according to our favour . The most commonly used vegetables for this veg Kurma recipe are , carrot , beans , peas , potato , cauliflower . The onion , tomato are all a base vegetable which should be used for many recipes including veg Kurma . 

It is an delicious and spicy dish which can be as main course or else served for chapati or parotta .

Ingredients :

Spices


  • Bay leaf - 2
  • Cinnamon - 2
  • Star anise - 1
  • Cardamom - 4
  • Cloves - 5
  • Fennel seeds - 1/2 tablespoon
  • Turmeric powder - 1/2 tablespoon
  • Garam masala - 1 tablespoon
  • Chilli powder - 1 tablespoon or according to your convenience .

Vegetables ( for veg Kurma recipe ) 


  • Onion - 5 medium size to be sliced 
  • Tomato - 3 medium size to be chopped
  • Green chilli - 1 medium size to be sliced
  • Carrot - 1 chopped 
  • Beans - 4 chopped
  • Potato - 1 cubed 
  • Peas - 1/4 cup soaked previous night 
  • Mint leaves
  • Coriander leaves

Other ingredients :


  • Salt to taste 
  • Ginger garlic paste - 1/2 cup
  • Cashewnut - 8 to 10
  • Oil - 3 tablespoon 
  • Coconut grated - 1/2 cup 

Method of preparation and cooking  :


It's preparation : 

  • Finely chop the carrot , beans and slice 2 Onion , 1 or 2 green chilli and 1 tomato .

  • Chop the potatoes for 1 inch . 

  • Boil the green peas and keep it aside .

  • For coconut paste , in a blended add small pieces of coconut and few fennel seeds and grind them as a paste by adding some water . The paste should be half a cup . According to that you should add the coconut . 

Cooking : 

  • In hot pot add 3-4 tablespoon of oil and add the spices which I listed out above in ingredients column   ( Bay leaf - 2Cinnamon - 2Star anise - 1Cardamom - 2Cloves - 2Fennel seeds - 1 tablespoon ) and cashewnut . Roast for 2 minutes in low flame .

  • Then add sliced onions , green chilli and mint leaves . Saute till onion changes to golden color .

Tip : now turn the flame to medium 

  • Add ginger garlic paste and cook it for 2 minutes .

  • Then , add tomatoes and cook till it get a soft texture . 

  • This is the stage to add all other vegetables I mentioned above . Cook the vegetables well.

Tip : add salt a pinch at this stage . Salt helps the vegetables to cook soon .

  • After the vegetables get shrinked add turmeric , garam masala , chilli powder and salt to it . Saute it well . All the raw smell of masalas should disappear .

  • Add water and check the taste of salt and spice to adjust it . And add coriander leaves .

Tip : the measurements of water should be decided by yourself . It depends on the quantity . 

  • Once the water starts to boil , close the cooking pot with lid and let if in medium flame for 10 - 15 minutes . 

  • Add the coconut paste which you prepared .

  • After , adding coconut paste it should be in flame for another 10 minutes .

  • Finally , turn of the flame after 10 minutes .
