Ghee rice recipe - vegetarian recipe

 

Ghee rice is the popular south Indian Pulav made of with cooked rice , ghee , spices with roasted nuts and onions . 
 
Along with ghee rice I had shared you a brinjal grave a yummy and perfect combination for ghee rice .

Ingredients :

  • Ghee - 7-8 tablespoon
  • Cashewnut - 15 -20
  • Raisins - 3 tablespoon
  • Bay leaf - 2
  • Cinnamon - 1
  • Star anise - 1
  • Cloves - 3
  • Cardamom - 2
  • Onion - 2
  • Green chilli - 2-3
  • Salt 
  • Basmati rice - 2 cup
  • Ginger garlic paste - 1 tablespoon
  • Coriander leaves 

Method of preparation :

For preparing ghee rice we can use two methods of preparation . One is with cooked rice add other ingredients and preparing the ghee rice . Another is cooking the rice during the preparation .

  • In cooking pot add 4 tablespoon of ghee . To this add 15-20 cashewnut and roast it in a low or medium flame . 
  • Then , add raisins and roast . Once raisins become puffy transfer the nuts into a separate plate or bowl . 
  • In the same cooking pot , add half sliced onion and roast it well till it get golden brown . This fried onion adds a special flavour to the recipe . Have a deep fry but don't burn . 
  • Transfer the onions into another plate or bowl . 
  • In a same pot add 2 tablespoon of ghee additionally . 
  • To this add bay leaf , star anise , cinnamon , cardamom and cloves . (Measurement given above in the ingredients column ) 
  • Roast it for 2 minutes in a low flame . 
  • Then , add one finely sliced onion and saute it well . 
  • Then , add ginger garlic paste . Once the raw smell of ginger garlic paste fades add 2-3 green chilli ( green chilli is according to your favour of spice ) 
  • Saute it well for another 2-3 minutes . 
  • Then to this add the basmati rice . 
( Basmati rice should be soaked for 15-20 minutes ) 
  • After adding the rice stir it well and leave for 5 minutes . 
  • Then , add 3 cups of water . 
( For 1 cup of basmati rice add 1 and 1/2 cup of water and for 2 cup of basmati rice add 3 cups of water . For measuring the water for rice take the same cup with which you measured the rice ) 
  • Close the pot with lid and let the rice to cook well . 
  • Once the rice cooked well add 2 tablespoon of ghee and roasted onions and nuts to it .
  • Then , add coriander leaves and stir it well . While stirring be gentle or else the rice will break . 
                Our ghee rice is ready !


Brinjal grave :

🕰️ Cooking time : 30 minutes
🔖 Cuisine : south Indian style
🔖 As a best combination fro ghee rice , chapati , paratha , naan or to any other pulav .

Ingredients : 

  • Brinjal - 5-6 
  • Peanuts - 20
  • Fennel seeds - 1 teaspoon
  • Cumin - 1 teaspoon
  • Sesame - 1/4 teaspoon
  • Fenugreek seeds
  • Gingelly oil 
  • Mustard seeds - 1/4 teaspoon
  • Urad Dal - 1 teaspoon
  • Onion - 2
  • Tomato - 2
  • Turmeric powder - 1/4 teaspoon
  • Coriander powder - 1 teaspoon
  • Chilli powder - 2-3 teaspoon
  • Ginger garlic paste - 1 teaspoon
  • Salt

Method of preparation :

  • In a cooking pan , roast 20 peanuts on a medium flame . Roast it for 2 minutes
  • Then , add 1 teaspoon of fennel seeds , 1 teaspoon cumin , 1/4 teaspoon sesame ( white or black ) , few fenugreek seeds ( don't add fenugreek more , it should be low in quantity than other seeds . )
  • Roast all these on medium flame for 2 minutes . And then turn of the burner .
  • Now , transfer this prepared mixture in a blender and grind them as a powder . 
  • Now , take a small size brinjals and make a deep X cut at bottom of each brinjals . 
  • In a cooking pot add 4 tablespoon of gingelly oil . And place 4-5 brinjal which you made X cut in the oil .
  • Fry it until it gets soft . Then , take it from the oil . 
  • Then in the same pot , add 1/4 teaspoon of mustard seeds , 1 teaspoon of urad Dal and roast for a minute . 
  • Then add 2 finely chopped onions and cook till it turns golden . 
  • Add required amount of salt to it .
  • Now , add 1 teaspoon ginger garlic paste , 1 teaspoon coriander powder , 2-3 teaspoon of chilli powder and 1/4 teaspoon of turmeric powder and the masala we prepared before . Saute it all for 2 minutes .
  • Meanwhile , grind 2 tomatoes as a paste and add to this . Cook it for 7-8 minutes . 
  • Once the oil oozes out add tamarind water ( soak tamarind in water for 10 minutes and strain the water ) . After 10 minutes add fried brinjal to this . 
  • Cook for 5 minutes and turn off the burner . 
    Our brinjal grave is ready !

Health tips :

Ghee is rich in nutrients like vitamin A and omega-3 fatty acids and conjugated linoleic acid which may support your heart health . But it should be consumed in limit . If not it then there will be a risk of health issues .
