Masala dosa is one of the south Indian's favourite breakfast . Dosa is the love of all kids , adults and old that too masala dosa is a yummy dish no one can miss . It's a thin , crisp crepe , aromatic dish made with fermented rice and lentil batter . Masala dosa is filled with potato stuff by spreading a special red chilli chutney before filling the stuff . Without these potato stuff and red chilli chutney it is simply a plain dosa .

I have explained masala dosa by dividing it into four sections ; red chilli chutney , potato stuff , batter preparation and finally making dosa .
Red chilli chutney :
Ingredients :
- Red chilli - 7 - 8
- Onion - 3
- Tomato - 2
- Garlic - few strands
- Oil
- Salt
Method of preparation :
- For this chutney preparation , soak 7-8 red chilli for 30 minutes .
- In a blender , add 3 chopped onions , 2 chopped tomatoes , few strands of garlic and soaked chillies .
- Blend this as a paste .
- In a pan heat 3 tablespoon of oil , add this paste and cook for 10 minutes in medium flame .
- Then , take off from the burner .
- Our spicy red chilli is ready .
Potato grave :
Ingredients :
- Potato - 8
- Green chilli - 2 - 3
- Onion - 3
- Mustard
- Chana dal
- Curry leaves
- Oil
- Turmeric powder
- Salt
Method of preparation :
- In a pan , add 2 tablespoon of oil , after oil gets heat , add a tablespoon of mustard , cumin seeds and chana Dal .
- Then , add 3 sliced onions, few curry leaves , and sliced green chillies . Saute it well .
- Then , add boiled potatoes to it . And add half a teaspoon of turmeric powder and salt to your taste .
- After 10 minutes in medium flame turn off the burner .
- Our hot potato grave is ready .
Dosa batter :
Ingredients :
Idly rice - 1/2 cup
Urad Dal - 1/2 cup
Fenugreek seeds - 3 tablespoon
Method of preparation :
- Soak all the above ingredients for 4 - 5 hours .
- But remember , always for batter soak urad Dal and fenugreek in one bowl and idly rice in another bowl .
- Then , rinse the three ingredients for 2 - 3 times in a fresh water before grinding .
- First , add urad Dal and fenugreek seeds ( methi ) to the grinder and start to grind by adding water little by little .
- Don't use more than one cup of water then the consistency will get spoiled .
- The urad Dal batter should be soft and fullfy . Once you got the consistency take off the batter from the grinder .
- Then , in the same grinder add idly rice and start to grind .
- If you want you can also add half a cup of idly rice for first time and next another half cup for second time .
- By adding water little by little grind the rice .
- But , rice should not grind soft as like urad Dal . It's consistency should be fine grainy .
- If this consistency occurs take off the batter from the grinder and add the remaining rice you kept aside and grind like a same way .
- Finally , mix the urad Dal batter and rice batter together by adding required amount of salt .
- Keep this aside for 7 - 8 hours to get ferment .
- Sometimes the hours of fermentation differ .
Masal dosa preparation :
- Heat the dosa pan , but don't over heat the pan then the dosa will not be proper .
- Then , stir the batter once before spreading it in a pan .
- Once the pan heated , spread the batter in a circular way . Cook it in medium flame ( spread the batter thin and evenly )
- Sprinkle the oil on top of dosa and at corners .
- Close the pan with lid or if you want without closing you can flip the dosa to cook the top .
- Once the base becomes golden and crisp . The edges of dosa starts to get separate from the pan .
- Now , apply the red chilli chutney to the top of dosa . Don't apply this paste all over the dosa . It is too spicy so just apply in a scattered way ( here and there but not completely ) .
- Then , add potato filling in the centre of dosa . Don't spread it .
- Then , fold the dosa and start to serve .
Our masala dosa is ready!

Masala dosa is healthy breakfast and it a love from kids to old . It's batter is rich in good carbohydrates . It is first made in Karnataka . The average calories in a dosa range between 165 to 170 calories . It is low on fat content . So , dosa is the best option for weight loss .
