Introduction to kolukattai recipe : 


There are both spicy and sweet kozhukattai . Here I'm going to share only sweet kozhukattai . It is made of rice flour and sweet stuffings with coconut and jaggery as a main ingredient .  I have explained it's stuffing or filling , it's dough , it's arrangement and finally steaming .

Preparation of sweet stuff :

Coconut pooranam :

Ingredients :

  • Coconut 
  • Jaggery 
  • Cardomon powder
  • Ghee

Steps to prepare :


  • In pan heat 3-4 tablespoon of ghee . Add a cup of grated coconut and cook for 2 minutes . Don't over cook it .

  • Then , add a cup of grated jaggery to this .

  • The jaggery starts to melt . Stir often throughout the process .

  • Once the jaggery melted , add 1/2 tablespoon of cardomon powder .

  • If the moisture of jaggery dries completely , turn off the flame .

  • Don't over cook then jaggery will become harder after it gets cool .

  • Let the mixture to cool .

Kozhukattai dough preparation :


Ingredients :

  • Rice flour
  • Water 
  • Salt 
  • Ghee

Steps to prepare :


  • In steel container , add 1.5 cup of water and 1/4 tablespoon of ghee . Let the water to boil .

  • Once the water starts to boil add 1/2 tablespoon of salt and add 1 cup of rice flour and start to stir . 

  • Don't add rice flour at a time , add little by little by stiring continuously .

  • Once the water absorbed completely , turn off the flame . And wait for 5 minutes .

  • Then , start to knead without burning your finger .

  • Knead till it gets a smooth texture . 

  • Cover the dough with a damp cotton cloth . Rest it for 10 - 15 minutes .

Preparation of kozhukattai :


Filling or stuffing the kozhukattai :


  • Make dough into small balls by rolling a small amount of dough between your palms .

  • Some will get cracks , so , rub a bit of water in your palms and roll again . Then , cracks won't appear .

  • Take a small dough balls and flatten it with your fingers . The edges should be thin than the centre ( slightly thick ) .

  • Have the sweet pooranam in the centre and start to fold the dough properly without tearing it .

  • Cover the dough and roll it between your palms ( be gentle ) to get proper round shape .

  • Grease both sides of kozhukattai mould with ghee or oil . 

  • Close or lock the mould . Through the hole or cavity add the dough you prepared .

 
  • Make a space or hole in the centre of the dough to place the coconut jaggery stuff .

  • After adding the stuff cover it with a small amount of dough to close the stuffing . And press it to flatten the bottom of kozhukattai .

  • Then , slowly release the lock of the mould and remove the kozhukattai .

Steaming kozhukattai :


Steps :


  • Grease a pan with ghee or oil or if you want you can also use banana leaves to cook kozhukattai .

  • Then , in that arrange the kozhukattai you made .

  • In a pot place the stand and add water .

  • Once the water starts to boil place the pan safely inside the pot on the stand and close the lid .

  • After 10 - 15 minutes turn of the flame .

Our kozhukattai for ganesha chaturthi is ready !
