Here , I'm to share you all a sweet recipes which will be helpful for you all during this festive season . Yes , for this diwali week I
shared a yummy , delicious badusha recipe to you all in step by step process .
Ingredients :
- Maida - 1 and 1/2 cup
- Baking powder - 1/2 teaspoon
- Curd - 2 tablespoon
- Ghee or butter - 4 tablespoon
- Sugar - 1-2 cup
- Milk - 3-4 tablespoon
- Cardamom - 2
- Saffron strands - 10 ( optional )
- Lemon extract

⏲️ Cooking time : 20 minutes

🔖 Process involved : kneading , frying and soaking

Method of preparation and cooking :
Dough preparation - part 1 :
Kneading:
- In a bowl , add half a cup of maida and 1/2 teaspoon of baking powder .
- Mix these two ingredients well using your hand .
- Then , add 2 tablespoon of curd ( yoghurt ) , 4 tablespoon of ghee or butter , 1/2 teaspoon sugar and 3-4 tablespoon of milk .
Tip : Don't add milk more than the given measurement . Then , there will be no layers and sugar syrup will not spread inside badusha .
- Start to knead using your both hands .
Tip : don't over knead . Dough should not be soft as chapati dough . It should be flaky .
- Now , rest the dough for 10 - 15 minutes by covering it with a dry cloth .
Sugar syrup :
- Heat 1/2 cup of water and dissolve 1 cup of sugar in it .
- Let the water to boil and sugar to dissolve completely .
- The consistency should be thin as like thread .
Tip : Don't over boil it , then the consistency changes . If the consistency is not correct then sugar syrup won't get inside of badusha .
- Once you got the consistency , add 2 cardamom , 10 saffron strands .
Tip : saffron starnds is optional . This is for only color .
- Then , add few drops of lemon extract .
Tip : this is to prevent sugar crystallization after it gets cool .
- After adding these three ingredients , immediately turn off the flame . And let it cool .
Dough preparation - part 2 :
- Take the prepared dough which you rest it for 10 - 15 minutes .
- Divide the dough as 10 equal parts and make a round shape using your palms gently .
- Now , make a small pit in each round shape balls using your index finger .
Tip : It's not a hole , it's a pit .
Frying :
- In a frying pan , add oil and start to heat it in a medium flame to fry all those dough balls .
Tip : Have a flame in medium or else badushas turn black outside and
Doesn't cook properly inside .
- Add 5 dough balls first and start to fry .
- Note whether badushas become lighten and float on oil .
- At this stage flip the badushas to the other side .
- The color of badushas changes to golden on all sides .
- Once the color obtained , take off from the oil .
- Drain the oil and immediately add to the sugar syrup .
- Likewise , fry another 5 dough balls and add to the syrup .
- Soak the badusha in sugar syrup for 5 minutes .
- Then , after 5 minutes take off from the sugar syrup and start plating it .
- Finally , garnish it with nuts .
Our delicious badusha is ready !
