Mutton kulambu - south Indian style

 




Mutton kulambu one of our delicious and spicy curry in non-veg which to be served for chapati , parotta , rice , dosa and idly . It is to be prepared with all spices and the well cooked mutton gives such a flavour and a unique taste to it .

Ingredients :


  • Mutton - 3/4 kg or 1 kg
  • Bay leaf - 2
  • Cinnamon - 4
  • Cardoman - 4
  • Cloves - 4
  • Fennel seeds - 1/2 tablespoon
  • Onion - 6
  • Tomato - 3
  • Green chilli - 1
  • Ginger garlic paste - half a cup
  • Turmeric  - 1/2 tablespoon
  • Chilli powder - 1 tablespoon
  • Garam masala - 1 tablespoon
  • Mutton masala - 1 tablespoon
  • Coriander powder 1 tablespoon
  • Coconut - half a cup 
  • Cashewnut - 5-6 
  • Salt - according to your taste
  • Coriander leaves
  • Oil

Method of preparation :

  • Clean the mutton and start to boil it in hot water by adding a tablespoon of turmeric powder and half a tablespoon of salt .
  • Let the meat to cook for 25-35 minutes . If you want to cook the meat in pressure cooker leave it for 7-8 whistle according to the type of meat .
  • Meanwhile , make a paste with coconut , onion and tomato .
  • In a pan , add 3 tablespoon of oil . Add 4 chopped onions and saute it well . Once the onion turns to golden Color , add 2 chopped tomato and cook till tomato turns soft . Then , turn off the stove .
  • In a blender , take half a cup of Coconut , 2 cinnamon , 2 cardomon , 5-6 cashewnut , 2 cloves , half a tablespoon of fennel seeds , few pepper , fried onion and tomato .
( Don't add too much spices , then this flavour become predominant ) 
  • After , meat cooked 3/4 th . In a pot add 5-6 tablespoon of oil , add 2 bay leaf , 2 cinnamon , 2 cardomon , 2 cloves . Rost it well but don't make it black .
  • Then , add 2 sliced onion , 1 sliced green chilli and saute it .
  • Once the onion turn golden color add half a cup of ginger garlic paste . Cook till the raw smell disappears .
  • Then , add 1 chopped tomato and cook for 2 minutes .
  • Then , add the cooked meat by filtering the water . Cook for 5 minutes .
  • Then , add all masalas . ( Turmeric, chilli , coriander powder , garam , mutton masala and salt - measurement given above in ingredients column ) 
( Adjust masalas according to the taste ) 
  • Cook till the raw smell disappears .
  • Then add the onion , tomato paste to it . Cook for 5 minutes .
  • Add water according to the quantity you want . ( But don't add excess , then the thick consistency will be lost ) .
  • While water starts boiling add coriander leaves .
  • And , finally check the meat that is cooked completely and then turn off the stove .

          Our mutton curry is ready ! 
  • Serve hot with lots of love and mutton .

Mutton is rich in protein , vitamins and minerals . It is good for muscle growth and it's maintenance , anemia , bone strength . 

Don't worry about fat . It has only good fat which helps in many health issues .
