Cauliflower pepper fry

 

Cauliflower ( Gobi ) pepper fry is a popular south Indian starter recipe which is made of with cauliflower which means Gobi florets and tossed with pepper masala . I had shared you this yummy delicious recipe with you all in step by step .

Ingredients :

  • Cauliflower
  • Maida - 1 cup
  • Cornflour - 1/2 cup
  • Onion 
  • Bay leaf - 1
  • Cinnamon - 1
  • Cloves - 3
  • Cardomom - 2
  • Red chillies - 2
  • Pepper 
  • Cumin
  • Fennel seeds 
  • Ginger garlic paste
  • Chilli powder
  • Coriander powder
  • Turmeric powder
  • Oil 
  • Salt 
  • Coriander leaves
  • Curry leaves

Method of preparation :

  • Take a fresh cauliflower (Gobi) and peel the florets of it . 
  • Don't make the florets fine pieces while peeling it . Make sure it should slight bigger as like you make for Gobi 65 . 
  • Now , in bowl add the florets of cauliflower and add 1 teaspoon of salt and pour hot water in it
  • This hot water procedure is to remove germs which are hidden in the crevices of Gobi .
  • Soak for 5 minutes . Then strain the water . 
  • Now , the cauliflower should be marinated for 30 minutes .
  • Add 1 cup of maida , 1/2 cup of cornflour ,  1/2 teaspoon of turmeric powder , 1 tablespoon of chilli powder and required amount of salt in a bowl  . ( You can adjust the spice according to your taste )
  • To this add water to make a paste . It should not be to watery in consistence .
  • In their ads the cauliflower florets and mix it with tag paste . All the cauliflower florets should be coasted well in the paste .
  • It should be left for 30 minutes so meanwhile you can prepare pepper masala and gravy .
  • For pepper masala , in blender add 1 tablespoon of pepper , 1 teaspoon cumin , 1/4 teaspoon of fennel seeds .
  • If you more spice you can add 1 tablespoon of pepper or else add 2 teaspoon of pepper . 
  • Now , grind all those , whatever you added in the blender . Make a powder and keep it aside . 
  • In pan , add oil to fry the cauliflower which you Marinated . 
  • Oil should 1/4 of the pan to fry the cauliflower (Gobi) deeply . 
  • Now , add the marinated cauliflower in two batch which means don't add all the cauliflower at a same time . 
  • Once the Gobi turns golden brown take off from the oil .
  • In a pan , add 3 tablespoon of oil . In this add bay leaf , cinnamon , cardomom , cloves . ( Measurement which I mention above in ingredients column ) .
  • Then , add 1 finely chopped onion . Saute it for 2 minutes . 
  • Then , add 1 teaspoon of ginger garlic paste . Cook for 2 minutes . 
  • To this add  1 teaspoon of chilli powder , 1 teaspoon of coriander powder and salt required amount . Saute it well
  • Add some water , just 3 tablespoon is enough to cook the masalas . 
  • Once , the raw smell of masalas disappears , add the cauliflower and the pepper masala which you prepared . 
  • Cook for 7-8 minutes . Once the color of cauliflower changes , add chopped coriander leaves and curry leaves . Finally turn off the burner .
