Chicken Briyani - south Indian style

 Briyani , this name itself a fame which made mouth watering on many of us . There is not much introduction needed for this wordless recipe . But still , I mention few about it . 

There are many varieties of briyani , in this I posted chicken briyani in South Indian style . It's dish made with spices , vegetables , meat , egg , ginger garlic paste as a main ingredient . Let me explain in detail .

Ingredients :

  • Onion - 4-5 ( big ) 
  • Tomato - 3 ( big )
  • Ginger garlic paste - 2 tablespoon
  • Green chillies - 3
  • Mint leaves - handful 
  • Curd - 2 tablespoon
  • Oil - 3 tablespoon
  • Ghee - 3 tablespoon
  • Chicken - 500 g
  • Salt 
  • Basmati rice - 2 cups (400 g)
  • Coriander leaves 
Spices : 
  • Bay leaf - 2
  • Cloves - 4
  • Cinnamon - 1
  • Fennel seeds - 1 teaspoon
  • Star anise - 1
  • Cardamom - 4
  • Turmeric powder - 1/4 teaspoon 
  • Chilli powder - 1 tablespoon
  • Garam masala - 1-2 tablespoon

Method of preparation and cooking :

Before getting to into cooking process , let's start it's preparation .

Onion , tomato and chilli - slice finely
 
Mint and coriander leaves - rinse with fresh water and chop coriander leaves alone .

Make a paste of Ginger and garlic .

Clean the chicken in a fresh water for three and four times properly .

Soak the basmati rice for 30 minutes .

Process of cooking : 
  • In a cooking pot or in a cooker add 3 tablespoon of oil and 3 tablespoon of ghee .
  • After 2 minutes , add bay leaf , cinnamon, cardamom , star anise , cloves , fennel seeds at a time . ( Measurements given above in ingredients column ) 
  • After two minutes , add sliced onions and green chillies and saute for 2 minutes . 

  • Then , add mint leaves and saute .

  • Once the mint leaves shrink , add ginger garlic paste and saute and cook till it's raw smell disappears . 

  • Then , add sliced tomatoes and let it cook for 2 minutes . Add salts of your required amount for briyani in this stage . Then , add chicken and saute it well .
Tip : From starting , the process to be carried over on medium flame . 
  • Close the lid for 5 minutes on medium flame and then open the lid stir once . 

  • Now , add the spices , turmeric , chilli powder and garam masala to it and saute once . 

  • It should be cook till the raw smell of masalas disappear . 
Tip : you can adjust the spices according to your taste . 
  • Now , add water of 3 glass . 
Tip : For 1 glass of basmati rice add 3 glass of water . Use the same measuring cup or glass for both rice and water . 
  • Once the water starts to boil add chopped coriander leaves and basmati rice . 

  • Now close the cooker by adding whistle . After 1 whistle turn off the flame and wait for 15 minutes . 
Tip : if you are cooking a pot or any other utensils just close the pot with lid without any gap and cook for 15-20 minutes till the water get observed and the rice cooked completely . 
  • After that , check whether the pressure is realised completely and then open the cooker . 

  • Stir once gently and check whether chicken and rice cooked well . 

          Our chicken briyani is ready ! 

Raita preparation : 

In a bowl of curd add 2-3 finely sliced onions and mix it well . 

To this add , 1 small size grated carrot and chopped cucumber . 

Remember , don't add carrot and cucumber more than the amount of onion .  Onion should be pre-dominant . 

Serve the hot briyani with raita and boiled eggs . 

Health tips : 

Taking chicken is not bad , but you have to choose the right one . It's content of protein helps to strengthen the bones and muscles . It has essential fatty acids , vitamins which is good to add in your balanced diet .
