Masala poori is such a favourite street food snack for many . It was first invented in North side of India . And it has different names on many states .
Masala poori is a yummy delicious snack with fried crispy dough balls ( Puri ) , pani , tarind chutney , masala gravy with green peas and potatoes , finally assembling with chopped onions , coriander leaves , mixture or sev .
Here , I have shared this fantabulous dish with you all in step by step procedure .

For all the preparation , ingredients list with measurements , method of cooking and certain tips were mentioned below in detail .

Poori preparation :
Ingredients :
- Rava - 1 cup
- Maida - 2 tablespoon
- Salt - 1/2 teaspoon
- Water - 1/3 cup ( 6 tablespoon )
Method of preparation :
Mix all the ingredients which I listed above and knead it for 5 minutes .
Keep it aside for 30 minutes by closing it with a damp cotton cloth .
Note : knead well . It's consistency should be elastic .
- After 30 minutes knead it again . And divide the dough into two or three parts and roll between your palms as a round shape well without getting cracks .
- Then , roll the parts evenly and thinly as a large round shape with rolling pin .
- It should be thin and even . If not then the Puri will not be puff up .
- Then , flip the entire rolling dough to another side and roll it .
- Once you got a evenly thin rolled dough , cut them into small small circles with cookie cutter or with small sharp edge bowl .
- Now , heat the oil in a pan and start to fry the small doughs .
- Fry 4-5 dough pieces at a time .
- Dry till golden to deep golden .
- Once you taken in the stage of golden then it becomes soft as soon as you taken from the oil .
- So , wait till it gets a deep golden color . Then only the Puri will be crispy .
- Once you fried all Puri , transfer it into a air tight container .
Pani preparation :
Ingredients :
- Mint - 1/2 cup
- Coriander - 1/2 cup
- Cumin - 1 teaspoon
- Pepper - 1/4 teaspoon
- Ginger - 1/2 inch
- Green chilli - 2-3
- Lemon - 1 ( small size )
- Salt
Method of preparation :
- In a blender add all the above ingredients which I mentioned above .
- Add some water and grind them not as like thick paste . It should in liquid consistency .
- Then , filter that in a bowl . And add extra 2 cups of water to that filtered mint juice .
- Taste it and check whether spice and salt is correct . If not , adjust it according to your taste .
Our pani is ready !
Tamarind chutney preparation :
Ingredients :
- Tamarind ( lemon size )
- Dates - 6
- Jaggery - 1/4 cup
- Chilli powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
Method of preparation :
- Soak a tamarind in a cup of water for 10 minutes and filter that water .
- In a pan , add that tamarind water , 6 dates , jaggery 1/2 cup , chilli powder 1/2 teaspoon and salt 1/4 teaspoon .
- ( Don't add chilli powder and salt much . Just a pinch is enough )
- It takes some time to boil .
- Once it starts boiling wait to get a thick consistency of it .
- Then , turn off the flame .
- Let it to cool . Then , transfer it into a blender and grind them as a paste .
Our tamarind chutney is ready !
Masala gravy preparation :
Ingredients :
- Green peas - 100g
- Potato - 2 medium size
- Onion - 1 big size
- Ginger - 1 inch
- Garlic - 3 cloves
- Green chilli - 1
- Tomato - 2 medium size
- Turmeric powder - 1/4 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Chilli powder - 1-2 teaspoon
- Salt
- Lemon
- Oil
- Coriander leaves
It's preparation :
Before getting into cooking process let me clear you in some points .
- Green peas which you taken should be soaked in water the previous night . Then , it will be cooked easily .
- In this process we need pressure cooker to boil green peas and potato .
- This preparation to be carried with basic masalas if you want you can add chaat masala and amchur powder in the process . I'll mention below where to add this .
- Chop the onion , green chilli and tomato finely .
It's cooking :
- In a pressure cooked add the soaked green peas and peeled potatoes .
- Then , add water till the green peas and potatoes soak completely .
- Add , 1 teaspoon of salt and close the cooker by adding whistle .
- In a medium flame let it cook for 4 whistles . After that turn off the flame and wait till the pressure is realised completely .
- Open the cooker , and smash the green peas . Don't smash completely it should be half smashed .
- Then , in a pan add 2-3 tablespoon of oil . Once the oil get heated add the chopped onion , green chilli , ginger and garlic .
- Saute it well and let it cook till the Color of the onion changes to slight golden .
Tip : saute often but not continuously .
- Then , add the chopped tomatoes and saute it .
- Tomato to be cooked well and then turn off the flame .
- Let the prepared mixture to cool for few minutes .
- Then , transfer it to the blender and grind them as a fine paste .
- Then , in that same pan , add 2 tablespoon of oil and add the grinded paste to it .
- To this add , turmeric powder , garama masala , chilli powder and salt of your required amount . ( Measurements are given above in the ingredients column )
Tip : At this stage if you want you can also add amchur powder and chaat masala .
- Let the masalas cook for 2 minutes . Then, add the smashed green peas and potato to this , stir well and close the lid of the pan .
- After 5-6 minutes , open the lid of the pan and add chopped coriander leaves .
Tip : add some water if you preparation is too thick . After adding water let it cook for another 5 minutes .
- After , that turn off the flame .
Our masala gravy is ready !
Assembling masala poori :
- Take a serving plate , have 5-6 poori on that and crush it well .
- On that , add the masala gravy which we prepared .
- On above that , add 1 tablespoon of Pani ,1 tablespoon of tamarind chutney .
- On above that , add handful of finely chopped onion , sev or mixture and finely chopped coriander leaves .
Tip : don't mix altogether while serving . It should be just assembled .
Our masala poori is now ready to serve and taste .
