Introduction to mutton kola : 

Mutton kola urundai is the chettinad recipe which is made by mutton keema . Here the mutton keema is cooked with masalas and grind them to make a kola balls . Finally it will be fried deeply in the oil . 

You can either buy mutton keema ( minced meat ) from the shop which is made by butcher or you can buy mutton and prepare keema by ignoring the bones and grinding the flesh in the blender . 

 Spicy and delicious mutton kola recipe is given below . 

Ingredients :

  • Mutton - 250 g ( minced )
  • Fennel - 1/2 teaspoon
  • Cinnamon - small size 
  • Cloves - 2
  • Cardamom - 2
  • Cashews - 5-6
  • Ginger garlic paste - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon 
  • Chilli powder - 1-2 teaspoom
  • Onion - 2
  • Coriander leaves
  • Roasted chana dal powder - 2 tablespoon
  • Oil
  • Salt 

Note :

⏲️ Preparation time : 20 minutes
🕰️ Frying time : 10-20 minutes

Method of preparation : 

  • In a pan , heat 2-3 tablespoon of oil . Once the oil heat add the spices . 

  • Add , 1/2 teaspoon of fennel seeds , 2 cloves , 2 cardamom , small size cinnamon and 5-6 cashews . Roast it for 2 minutes in a low flame .

  • Then , to this add finely chopped Onion and saute it . 

  • Once the Onion changed to golden .

  • Then , add 1 tablespoon of Ginger garlic paste . 

  • Add minced meat and saute it well .

  • Let the meat to cook for 5 - 10 minutes . 

Tip : Don't add water , the mixture you are preparing with mutton should be dry . If water content is released from the mutton , cook till it gets dry in a medium flame . 

  • After 5-10 minutes , add 1/2 teaspoon turmeric powder , 1-2 teaspoon of chilli powder . Saute it once .

  • Cook till the raw smell of masalas disappears . 

  • Add the required amount of salt for this recipe . 

  • Saute it well and turn off the flame . 

Let it cool for 10 - 15 minutes . 

  • Transfer the mutton which you prepared to the blender .

  • Grind them well without adding water . 

  • Now , to this grinded mutton , add finely chopped coriander leaves and 2 tablespoon of roasted gram powder ( potu kadalai maavu ) . 

  • Mix it well . 

  • Now , divide them into 10 equal parts and start to make a small balls of it . 

Tip : the number balls vary according to the size you make . 

Frying :

  • In a frying pan , heat the oil . 

  • Once the oil heated , place the balls which you prepared in the oil gently .

Tip : Maintain the flame in the medium .

  • Fry till it gets a golden brown on both sides.

Tip : if the flame is high it will turn black outside and not cook well inside . 

  • Place 3-4 balls at a time in the oil . The number balls for frying in a pan vary according to the size of pan you are using . 

  • Likewise fry all the balls you prepared . 

       Our mutton kola urundai is ready !

  • After it gets cool grind them as a fine paste.

  • Now , divide them into small balls and fry them in a oil till it turns dark brown on both sides . 

Health tips :

Mutton is rich in protein , vitamins and minerals . It is good for muscle growth and it's maintenance , anemia , bone strength . 

Don't worry about fat . It has only good fat which helps in many health issues .
