In my last post , I shared you a chocolate Lava cake . Now , in this blog I'm going to share you , a simple plum cake recipe .

Introduction to plum cake :
Plum cake is one of all our delicious and yummy recipe which is especially made of during this Christmas season . It is made of with dry fruits , grape juice/ red wine , caramalized sugar and with other batter making ingredients .
Note :
⏲️ Soaking time : 2 days soaking / 5 minutes boiling
🕰️ Caramalizing time : 5 minutes
⏱️ Preparation time : 10 minutes
⏰ Baking time : 40-50 minutes in cooker , 70-80 minutes in a oven .
🔖 Pan size : about 8 - 10 inch pan

Ingredients :
- All purpose flour / maida - 2 cups
- Unsalted butter - 1 cup
- Sugar - 2 cups
- Eggs - 5
- Baking soda - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Vanilla extract - 1 tablespoon
- Sugar - 1/2 cup
- Water - 1/2 cup
- Cardamom powder - 1/4 teaspoon
- Black raisins - 1/2 cup
- Cherry - 1 cup
- Tutti fruit - 1 cup
- Nuts - 1 cup ( walnut , raisins , cashews )
- Grape juice - 2 cup
Let's start it's preparation :
Soaking/ boiling nuts :
- In a mixing bowl , add 1 cup of cashews , almond and walnut . The nuts should be chopped .
- Then , add 1 cup of cherry , 1 cup of tutti fruit , 1 cup of raisins .
- To this add , add the grape juice upto 2 cups or till the nuts and fruits sunk completely .
- Boil it for 5-10 in a medium flame .
- It should be boil well .
- Let it cool .
Tip : If you want to soak and use , then you need to soak for 2 days .
Caramalizing sugar :
Caramalizing sugar is commonly known method by many .
- In a pan , add 1/2 cup of sugar , and 1/4 cup of water .
- Boil them for 5 minutes .
- After 5 minutes , the boiling water starts to turn a brown shade with bubbles .
- Wait till it gets a dark brown colour .
- Once the colour reached , add another 1/4 cup of water .
- Boil for another 5 minutes and turn off the flame .
Batter preparation :
- Take a big mixing bowl , add 5-6 eggs ( both yellow and white ) , melted butter ( unsalted ) 1 cup , 1.5 cup of powdered sugar ( grind the sugar in a blender as a fine powder ) , mix all these once well .
- Then , to this add 2-2.5 cups of maida or all purpose flour , 1/4 teaspoon of cardamom powder , 1/2 teaspoon of baking powder and 1/2 teaspoon of baking soda .
- Mix well and start to whisk for 5 minutes .
- Then , add the caramalized sugar and soaked/boiled nuts which you prepared and 1 tablespoon of vanilla extract .
Tip : if you soaked the nuts for 2 days in a grape juice , while preparing batter after 2 days , the grape juice quantity will be reduced to 1/4 cup in the nuts . So , while preparing batter add this 1/4 cup of grape juice . If you boiled the nuts , kindly add the remaining grape juice according to the batter consistency .
- Mix them once well .
Tip : The consistency of batter should be not too watery or too thick .
- Before transferring the batter to the baking pan , grease the pan with the butter on all the sides of a pan and place a butter paper on the bottom/base .
- And , transfer the batter to the baking pan .
- Tap , the baking pan once or twice to avoid the air bubbles inside the batter.
Baking cake :
In a oven :
If you want to bake it in a big size of pan , then bake it for 70 - 80 minutes in 360°F / 180°C . If you want to use a medium size pan then 40 - 50 minutes is enough .
In a cooker :
Preheat the cooker for 15 minutes in a medium flame . Before pre heating , add one layer of salt to the base of the cooker , above that place a stand and a plate on that.
Tip : You can reuse the salt for cake baking .
Choose the pan which suits your cooker . Place the batter filled pan in a cooker without interacting with the sides of the cooker .
Tip : If you cooker is small , according to that you prepare the batter quantity . So , that you will place a small pan inside it . ( You just reduce the given quantity into half of the amount )
In a medium flame , let it bake for 40 - 50 minutes .
To check whether the cake is baked completely , you can use knife . By inserting the knife gently into the cake you can check . If the cake is non sticky then it is perfect . If the batter sticks to the knife , let it bake for another few minutes .
Short review :
- In a mixing bowl , add 6 eggs , 1 cup of butter , 1.5 cups of powdered sugar , 2 cups of maida , 1/4 teaspoon of cardamom powder , 1/2 teaspoon of baking soda , 1/2 teaspoon of baking powder , 1 tablespoon of vanilla extract , caramalized sugar and soaked nuts , raisins , cherry , tutti fruits .
- Mix altogether well and whisk for 5 minutes .
- Grease the baking pan with butter and place a butter paper .
- Transfer it to the baking pan and TPA the pan twice gently .
- Bake for 70-80 minutes in 360°F in a oven .
Tips :
Vanilla extract :
Vanilla extract or essence is a natural solution made from the pods of vanilla plant which is used to give a flavour to some of the dishes . It is a essential ingredient to provide a vanilla flavour in desserts , ice creams , cakes , brownies , cup cakes , puddings , custard .
